Ingredients

  • 6–7 carrots, chopped
  • 1 onion, diced
  • 1 potato, cubed
  • 1 tsp ground coriander
  • Handful fresh coriander
  • 1 litre vegetable or chicken stock
  • 1 tbsp oil
  • Salt & pepper

Method

  1. Sauté the onion in oil until soft.
  2. Add ground coriander and potato; cook for 2 minutes.
  3. Add carrots and stock, then simmer for 20 minutes.
  4. Blend until smooth and stir through fresh coriander.
  5. Season to taste.
