Ingredients

  • 2 carrots, chopped
  • 2 potatoes, diced
  • 1 onion, chopped
  • 2 celery sticks, chopped
  • 1 courgette or any extra veg (optional)
  • 1 tin chopped tomatoes
  • 1 litre vegetable stock
  • 1 tsp mixed herbs
  • Salt & pepper

Method

  1. Add all chopped vegetables to a large pot.
  2. Pour in stock, tomatoes and herbs.
  3. Bring to a boil, then simmer 30–40 minutes until everything is soft.
  4. Lightly mash or blend a small portion to thicken.
  5. Season well.
