Bright, fragrant and tender — perfect with rice, potatoes or veg.

Ingredients

  • 1 whole chicken
  • 1 lemon, sliced
  • 6 garlic cloves
  • 1 tbsp olive oil
  • 1 tsp oregano
  • 1 tsp thyme
  • 200ml chicken stock
  • Salt & pepper

Method

  1. Rub the chicken with oil, herbs, salt and pepper.
  2. Add lemon slices and garlic to the slow cooker.
  3. Place chicken on top and pour in the stock.
  4. Cook on LOW 6–7 hours.
  5. Grill briefly to crisp the skin.
  6. Serve with the lemony cooking juices.
