A simple noodle dish with savoury soy flavours and crisp vegetables.

Ingredients

  • 300g egg noodles
  • 1 onion, sliced
  • 1 carrot, julienned
  • 1 handful beansprouts
  • 2 spring onions, sliced
  • 2 tbsp light soy sauce
  • 1 tbsp dark soy sauce
  • 1 tsp sugar
  • 1 tbsp oil

Method

  1. Cook noodles and drain.
  2. Fry onion and carrot in oil.
  3. Add beansprouts and spring onions.
  4. Toss in noodles.
  5. Add both soy sauces and sugar; stir fry for 2 minutes.
