Golden, crispy chicken paired with a simple, fresh tomato pasta — a proper Italian American classic.
Ingredients
For the chicken:
- 2 chicken breasts, butterflied
- 1 egg, beaten
- 50g breadcrumbs
- 30g Parmesan, grated
- Salt & pepper
- 1 tbsp oil
For the spaghetti:
- 200g spaghetti
- 1 tin chopped tomatoes
- 2 garlic cloves, crushed
- 1 tsp oregano
- 1 tbsp olive oil
- Salt & pepper
Method
- Mix breadcrumbs with Parmesan, salt and pepper.
- Dip chicken in egg, then coat in the breadcrumb mix.
- Pan fry in oil until golden and cooked through.
- For the pasta, fry garlic in olive oil, add tomatoes and oregano, and simmer 10 minutes.
- Cook spaghetti, drain, and toss through the sauce.
- Serve chicken on top of the spaghetti.
