A Northern classic — buttery pastry filled with creamy cheese and soft onions.
Ingredients
- 2 onions, sliced
- 300g grated cheese (Cheddar + a bit of Red Leicester works well)
- 1 tbsp butter
- Salt & pepper
Pastry
- 250g plain flour
- 125g butter
- 1-3 tbsp milk or water
- pinch salt
Method
- Fry onions in butter until soft and sweet.
- Mix onions with cheese, salt and pepper.
- Line a pie dish with pastry, add filling, top with pastry.
- Bake at 200°C for 25–30 minutes.
