A lighter stew with tender chicken and soft vegetables — simple and satisfying.

Ingredients

  • 2 chicken breasts, diced
  • 3 carrots, chopped
  • 2 potatoes, cubed
  • 1 onion, diced
  • 2 garlic cloves
  • 1 tsp thyme
  • 1 tsp paprika
  • 500ml chicken stock
  • 1 tbsp oil
  • Salt & pepper

Method

  1. Fry onion and garlic in oil.
  2. Add chicken and lightly brown.
  3. Add carrots, potatoes, thyme and paprika.
  4. Pour in stock and simmer 25–30 minutes.
  5. Mash a few pieces of potato to thicken.
