A wholesome, old school pressure cooker stew — simple ingredients, big comfort.

Ingredients

  • 1 pack celery, chopped
  • 2 carrots, chopped
  • 2 potatoes, cubed
  • 1 onion, chopped
  • 2 chicken stock cubes
  • 2 vegetable stock cubes
  • 2 chicken breasts, diced
  • 1 handful barley
  • 1 handful red lentils
  • 1 handful oats
  • Salt & pepper
  • Water to cover

Method

  1. Chop all ingredients into bite sized pieces.
  2. Add everything to the pressure cooker.
  3. Pour in enough water to just cover the ingredients.
  4. Pressure cook for 10 minutes.
  5. Fast release the pressure.
  6. Loosely mash to break up larger chunks and thicken the stew.
  7. Season to taste.
