A thick, gooey cookie “pie” stuffed with Mini Eggs — perfect warm or cold.
Ingredients
- 250g butter
- 200g brown sugar
- 150g white sugar
- 2 eggs
- 450g plain flour
- 1 tsp baking powder
- 1 tsp bicarbonate of soda
- 300g Mini Eggs
- 150g chocolate chips
Method
- Cream butter and sugars.
- Add eggs.
- Fold in dry ingredients.
- Stir in Mini Eggs and chocolate chips.
- Press into a lined 20cm tin.
- Bake at 180°C for 25–30 mins until golden but soft in the middle.
- Cool slightly before slicing.
