Jammie Dodger Cupcakes
Ingredients
For the cupcakes
- 150g butter
- 150g caster sugar
- 3 eggs
- 150g self raising flour
- 1 tsp vanilla
For the filling
- 6–8 tsp strawberry or raspberry jam
For the buttercream
- 200g butter
- 350g icing sugar
- 1 tsp vanilla
Decoration
Method
1. Cupcakes
- Beat butter and sugar until fluffy.
- Add eggs and vanilla.
- Fold in flour.
- Divide into 12 cases.
- Bake 18–20 minutes.
- Cool completely.
2. Fill
- Core each cupcake.
- Add ½–1 tsp jam.
- Replace the cake “lid”.
3. Buttercream
- Beat butter until pale.
- Add icing sugar gradually.
- Add vanilla.
- Pipe onto cupcakes.
- Top with a mini Dodger.
