Ingredients

For the cupcakes

  • 150g butter
  • 150g caster sugar
  • 3 eggs
  • 150g self raising flour
  • 1 tsp vanilla

For the filling

  • 6–8 tsp strawberry or raspberry jam

For the buttercream

  • 200g butter
  • 350g icing sugar
  • 1 tsp vanilla

Decoration

  • Mini Jammie Dodgers

Method

1. Cupcakes

  1. Beat butter and sugar until fluffy.
  2. Add eggs and vanilla.
  3. Fold in flour.
  4. Divide into 12 cases.
  5. Bake 18–20 minutes.
  6. Cool completely.

2. Fill

  1. Core each cupcake.
  2. Add ½–1 tsp jam.
  3. Replace the cake “lid”.

3. Buttercream

  1. Beat butter until pale.
  2. Add icing sugar gradually.
  3. Add vanilla.
  4. Pipe onto cupcakes.
  5. Top with a mini Dodger.
