Thin, soft, buttery crêpes that work with sweet or savoury fillings.
Ingredients
- 150g plain flour
- 2 large eggs
- 300ml milk
- 1 tbsp melted butter
- 1 tbsp sugar (optional for sweet crêpes)
- Pinch of salt
Method
- Whisk flour, sugar and salt in a bowl.
- Add eggs and half the milk; whisk until smooth.
- Add remaining milk and melted butter.
- Rest batter for 20 minutes.
- Heat a non stick pan and lightly grease.
- Pour a thin layer of batter and swirl to coat.
- Cook 1–2 minutes per side.
