Thin, soft, buttery crêpes that work with sweet or savoury fillings.

Ingredients

  • 150g plain flour
  • 2 large eggs
  • 300ml milk
  • 1 tbsp melted butter
  • 1 tbsp sugar (optional for sweet crêpes)
  • Pinch of salt

Method

  1. Whisk flour, sugar and salt in a bowl.
  2. Add eggs and half the milk; whisk until smooth.
  3. Add remaining milk and melted butter.
  4. Rest batter for 20 minutes.
  5. Heat a non stick pan and lightly grease.
  6. Pour a thin layer of batter and swirl to coat.
  7. Cook 1–2 minutes per side.
