A self saucing chocolate pudding that forms a rich fudge sauce underneath as it bakes.
Ingredients
For the batter
- 150g plain flour
- 150g caster sugar
- 30g cocoa powder
- 2 tsp baking powder
- 150ml milk
- 50g melted butter
- 1 tsp vanilla
For the sauce
- 150g brown sugar
- 30g cocoa powder
- 300ml boiling water
Method
1. Make the batter
- Mix flour, sugar, cocoa and baking powder.
- Add milk, melted butter and vanilla.
- Spread into a baking dish.
2. Add the sauce
- Mix brown sugar and cocoa.
- Sprinkle evenly over the batter.
- Pour boiling water gently over the top (don’t stir).
3. Bake
- Bake at 180°C (160°C fan) for 30–35 minutes.
- The top becomes cake; underneath becomes fudge sauce.
