A classic British pudding made with buttery bread, custard and warm spices.

Ingredients

  • 8 slices of brioche or white bread
  • 50g butter, softened
  • 75g raisins or sultanas
  • 400ml whole milk
  • 200ml double cream
  • 3 eggs
  • 75g sugar
  • 1 tsp vanilla
  • ½ tsp cinnamon

Method

1. Prepare the bread

  1. Butter each slice and cut into triangles.
  2. Layer bread in a baking dish, scattering raisins between layers.

2. Make the custard

  1. Heat milk and cream until warm (not boiling).
  2. Whisk eggs, sugar, vanilla and cinnamon.
  3. Slowly pour warm milk mixture into the eggs, whisking constantly.

3. Assemble & bake

  1. Pour custard over the bread.
  2. Leave to soak for 10 minutes.
  3. Bake at 180°C (160°C fan) for 30–35 minutes until golden and set.
