Ingredients

  • 1 large head broccoli (stalk included), chopped
  • 1 leek, sliced
  • 1 celery stick, chopped
  • 1 potato, cubed
  • 1 litre vegetable stock
  • 120–150g Stilton, crumbled
  • 1 tbsp butter or oil
  • Black pepper

Method

  1. Gently cook leek, celery and potato in butter until softened.
  2. Add broccoli stalks and stock; simmer 10 minutes.
  3. Add broccoli florets and cook until tender.
  4. Blend until smooth, then stir in Stilton to melt.
  5. Finish with black pepper.
