Ingredients
- 6–7 carrots, chopped
- 1 onion, diced
- 1 potato, cubed
- 1 tsp ground coriander
- Handful fresh coriander
- 1 litre vegetable or chicken stock
- 1 tbsp oil
- Salt & pepper
Method
- Sauté the onion in oil until soft.
- Add ground coriander and potato; cook for 2 minutes.
- Add carrots and stock, then simmer for 20 minutes.
- Blend until smooth and stir through fresh coriander.
- Season to taste.
