Carrot Loaf Cake with Cream Cheese Frosting
Ingredients
- 200g grated carrots
- 150g light brown sugar
- 100g caster sugar
- 150ml vegetable oil
- 3 eggs
- 200g plain flour
- 1 tsp baking powder
- 1 tsp bicarbonate of soda
- 1 tsp cinnamon
- ½ tsp nutmeg
- Pinch of salt
For the frosting
- 150g cream cheese (cold)
- 75g butter, softened
- 200g icing sugar
- 1 tsp vanilla
Method
1. Make the cake
- Heat oven to 170°C (150°C fan). Line a loaf tin.
- Whisk sugars, oil and eggs until smooth.
- Add grated carrots.
- Fold in flour, baking powder, bicarb, spices and salt.
- Pour into tin and bake 45–55 minutes until a skewer comes out clean.
- Cool completely.
2. Frosting
- Beat butter until smooth.
- Add cream cheese and beat briefly (don’t overmix).
- Add icing sugar and vanilla.
- Spread over cooled cake.
