Ingredients

  • 200g grated carrots
  • 150g light brown sugar
  • 100g caster sugar
  • 150ml vegetable oil
  • 3 eggs
  • 200g plain flour
  • 1 tsp baking powder
  • 1 tsp bicarbonate of soda
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • Pinch of salt

For the frosting

  • 150g cream cheese (cold)
  • 75g butter, softened
  • 200g icing sugar
  • 1 tsp vanilla

Method

1. Make the cake

  1. Heat oven to 170°C (150°C fan). Line a loaf tin.
  2. Whisk sugars, oil and eggs until smooth.
  3. Add grated carrots.
  4. Fold in flour, baking powder, bicarb, spices and salt.
  5. Pour into tin and bake 45–55 minutes until a skewer comes out clean.
  6. Cool completely.

2. Frosting

  1. Beat butter until smooth.
  2. Add cream cheese and beat briefly (don’t overmix).
  3. Add icing sugar and vanilla.
  4. Spread over cooled cake.
