A Northern classic — buttery pastry filled with creamy cheese and soft onions.

Ingredients

  • 2 onions, sliced
  • 300g grated cheese (Cheddar + a bit of Red Leicester works well)
  • 1 tbsp butter
  • Salt & pepper

Pastry

  • 250g plain flour
  • 125g butter
  • 1-3 tbsp milk or water
  • pinch salt

Method

  1. Fry onions in butter until soft and sweet.
  2. Mix onions with cheese, salt and pepper.
  3. Line a pie dish with pastry, add filling, top with pastry.
  4. Bake at 200°C for 25–30 minutes.
