A quick, satisfying dish that tastes like a proper takeaway favourite.

Ingredients

  • 2 cooked chicken breasts, diced
  • 3 cups cooked rice (cold)
  • 1 onion, diced
  • 1 cup frozen peas
  • 2 eggs, beaten
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 garlic clove
  • 1 tbsp oil

Method

  1. Heat oil and fry onion and garlic.
  2. Add chicken and peas; cook for 2 minutes.
  3. Push everything aside and scramble the eggs.
  4. Add rice, soy sauce and sesame oil.
  5. Stir fry until hot and well combined.
