Golden, crispy chicken paired with a simple, fresh tomato pasta — a proper Italian American classic.

Ingredients

For the chicken:

  • 2 chicken breasts, butterflied
  • 1 egg, beaten
  • 50g breadcrumbs
  • 30g Parmesan, grated
  • Salt & pepper
  • 1 tbsp oil

For the spaghetti:

  • 200g spaghetti
  • 1 tin chopped tomatoes
  • 2 garlic cloves, crushed
  • 1 tsp oregano
  • 1 tbsp olive oil
  • Salt & pepper

Method

  1. Mix breadcrumbs with Parmesan, salt and pepper.
  2. Dip chicken in egg, then coat in the breadcrumb mix.
  3. Pan fry in oil until golden and cooked through.
  4. For the pasta, fry garlic in olive oil, add tomatoes and oregano, and simmer 10 minutes.
  5. Cook spaghetti, drain, and toss through the sauce.
  6. Serve chicken on top of the spaghetti.
