A lighter stew with tender chicken and soft vegetables — simple and satisfying.
Ingredients
- 2 chicken breasts, diced
- 3 carrots, chopped
- 2 potatoes, cubed
- 1 onion, diced
- 2 garlic cloves
- 1 tsp thyme
- 1 tsp paprika
- 500ml chicken stock
- 1 tbsp oil
- Salt & pepper
Method
- Fry onion and garlic in oil.
- Add chicken and lightly brown.
- Add carrots, potatoes, thyme and paprika.
- Pour in stock and simmer 25–30 minutes.
- Mash a few pieces of potato to thicken.
