A self saucing chocolate pudding that forms a rich fudge sauce underneath as it bakes.

Ingredients

For the batter

  • 150g plain flour
  • 150g caster sugar
  • 30g cocoa powder
  • 2 tsp baking powder
  • 150ml milk
  • 50g melted butter
  • 1 tsp vanilla

For the sauce

  • 150g brown sugar
  • 30g cocoa powder
  • 300ml boiling water

Method

1. Make the batter

  1. Mix flour, sugar, cocoa and baking powder.
  2. Add milk, melted butter and vanilla.
  3. Spread into a baking dish.

2. Add the sauce

  1. Mix brown sugar and cocoa.
  2. Sprinkle evenly over the batter.
  3. Pour boiling water gently over the top (don’t stir).

3. Bake

  • Bake at 180°C (160°C fan) for 30–35 minutes.
  • The top becomes cake; underneath becomes fudge sauce.
