Ingredients
- 2 carrots, chopped
- 2 potatoes, diced
- 1 onion, chopped
- 2 celery sticks, chopped
- 1 courgette or any extra veg (optional)
- 1 tin chopped tomatoes
- 1 litre vegetable stock
- 1 tsp mixed herbs
- Salt & pepper
Method
- Add all chopped vegetables to a large pot.
- Pour in stock, tomatoes and herbs.
- Bring to a boil, then simmer 30–40 minutes until everything is soft.
- Lightly mash or blend a small portion to thicken.
- Season well.
