Soft, chewy cookie bars packed with Mini Eggs — easier than cookies, just as good.

Ingredients

  • 200g butter
  • 150g brown sugar
  • 100g caster sugar
  • 2 eggs
  • 350g plain flour
  • 1 tsp baking powder
  • ½ tsp bicarbonate of soda
  • 250g Mini Eggs, crushed
  • 150g chocolate chips

Method

  1. Cream butter and sugars.
  2. Add eggs.
  3. Fold in flour, baking powder and bicarb.
  4. Stir in Mini Eggs and chocolate chips.
  5. Press into a lined traybake tin.
  6. Bake at 180°C (160°C fan) for 20–25 minutes.
  7. Cool before slicing.
