A thick, gooey cookie “pie” stuffed with Mini Eggs — perfect warm or cold.

Ingredients

  • 250g butter
  • 200g brown sugar
  • 150g white sugar
  • 2 eggs
  • 450g plain flour
  • 1 tsp baking powder
  • 1 tsp bicarbonate of soda
  • 300g Mini Eggs
  • 150g chocolate chips

Method

  1. Cream butter and sugars.
  2. Add eggs.
  3. Fold in dry ingredients.
  4. Stir in Mini Eggs and chocolate chips.
  5. Press into a lined 20cm tin.
  6. Bake at 180°C for 25–30 mins until golden but soft in the middle.
  7. Cool slightly before slicing.
