Thick, gooey, chunky cookies with a soft centre and crisp edges — the classic New York style.

Ingredients

  • 225g cold unsalted butter, cubed
  • 150g light brown sugar
  • 100g caster sugar
  • 2 large eggs
  • 400g plain flour
  • 1 tsp baking powder
  • ½ tsp bicarbonate of soda
  • ½ tsp salt
  • 300g chocolate chips or chunks (mix of milk & dark works best)

Method

1. Make the dough

  1. Beat cold butter with both sugars until combined but still slightly chunky.
  2. Add eggs and mix until just combined.
  3. Add flour, baking powder, bicarb and salt.
  4. Fold in chocolate chips.

2. Shape

  1. Divide dough into 8–10 large balls (about 100–120g each).
  2. Chill for at least 1 hour — overnight is even better.

3. Bake

  1. Heat oven to 180°C (160°C fan).
  2. Place cookies well spaced on a lined tray.
  3. Bake 12–14 minutes until golden at the edges but soft in the middle.
  4. Cool on the tray to set.
