Thick, gooey, chunky cookies with a soft centre and crisp edges — the classic New York style.
Ingredients
- 225g cold unsalted butter, cubed
- 150g light brown sugar
- 100g caster sugar
- 2 large eggs
- 400g plain flour
- 1 tsp baking powder
- ½ tsp bicarbonate of soda
- ½ tsp salt
- 300g chocolate chips or chunks (mix of milk & dark works best)
Method
1. Make the dough
- Beat cold butter with both sugars until combined but still slightly chunky.
- Add eggs and mix until just combined.
- Add flour, baking powder, bicarb and salt.
- Fold in chocolate chips.
2. Shape
- Divide dough into 8–10 large balls (about 100–120g each).
- Chill for at least 1 hour — overnight is even better.
3. Bake
- Heat oven to 180°C (160°C fan).
- Place cookies well spaced on a lined tray.
- Bake 12–14 minutes until golden at the edges but soft in the middle.
- Cool on the tray to set.
