A rich, comforting stew with tender beef and soft vegetables — a proper winter warmer.

Ingredients

  • 800g stewing beef, diced
  • 3 carrots, chopped
  • 2 potatoes, cubed
  • 2 celery sticks, chopped
  • 1 onion, diced
  • 2 garlic cloves
  • 2 tbsp tomato purée
  • 500ml beef stock
  • 1 tbsp Worcestershire sauce
  • 1 tsp thyme
  • 1 tsp rosemary
  • 2 tbsp flour
  • Salt & pepper

Method

  1. Toss beef in flour, salt and pepper.
  2. Brown the beef in a pan (optional but adds flavour).
  3. Add all vegetables to the slow cooker.
  4. Stir in tomato purée, herbs, Worcestershire and stock.
  5. Add the beef on top.
  6. Cook on LOW 8–10 hours or HIGH 5–6 hours.
  7. Stir before serving to thicken.
