A rich, comforting stew with tender beef and soft vegetables — a proper winter warmer.
Ingredients
- 800g stewing beef, diced
- 3 carrots, chopped
- 2 potatoes, cubed
- 2 celery sticks, chopped
- 1 onion, diced
- 2 garlic cloves
- 2 tbsp tomato purée
- 500ml beef stock
- 1 tbsp Worcestershire sauce
- 1 tsp thyme
- 1 tsp rosemary
- 2 tbsp flour
- Salt & pepper
Method
- Toss beef in flour, salt and pepper.
- Brown the beef in a pan (optional but adds flavour).
- Add all vegetables to the slow cooker.
- Stir in tomato purée, herbs, Worcestershire and stock.
- Add the beef on top.
- Cook on LOW 8–10 hours or HIGH 5–6 hours.
- Stir before serving to thicken.
