A melt in the mouth beef dinner with a rich, savoury gravy and soft vegetables.

Ingredients

  • 1.5kg beef chuck or brisket
  • 4 carrots, cut into chunks
  • 3 potatoes, halved
  • 2 onions, quartered
  • 3 garlic cloves
  • 500ml beef stock
  • 2 tbsp Worcestershire sauce
  • 1 tbsp soy sauce
  • 1 tbsp tomato purée
  • 1 tsp thyme
  • 1 tsp paprika
  • Salt & pepper

Method

  1. Season the beef well.
  2. Add all vegetables to the slow cooker.
  3. Mix stock, Worcestershire, soy, purée and spices; pour over.
  4. Place beef on top.
  5. Cook on LOW 8–10 hours until fork tender.
  6. Remove beef, slice or shred.
  7. Thicken the cooking liquid for gravy.
