A melt in the mouth beef dinner with a rich, savoury gravy and soft vegetables.
Ingredients
- 1.5kg beef chuck or brisket
- 4 carrots, cut into chunks
- 3 potatoes, halved
- 2 onions, quartered
- 3 garlic cloves
- 500ml beef stock
- 2 tbsp Worcestershire sauce
- 1 tbsp soy sauce
- 1 tbsp tomato purée
- 1 tsp thyme
- 1 tsp paprika
- Salt & pepper
Method
- Season the beef well.
- Add all vegetables to the slow cooker.
- Mix stock, Worcestershire, soy, purée and spices; pour over.
- Place beef on top.
- Cook on LOW 8–10 hours until fork tender.
- Remove beef, slice or shred.
- Thicken the cooking liquid for gravy.
