Creamy, silky and comforting — made the traditional way with eggs, cheese and pancetta.
Ingredients
- 300g spaghetti
- 150g pancetta or streaky bacon
- 2 eggs + 1 egg yolk
- 60g Parmesan or Pecorino
- Black pepper
Method
- Cook spaghetti, reserving a cup of pasta water.
- Fry pancetta until crisp.
- Beat eggs with cheese and lots of black pepper.
- Add hot pasta to the pancetta pan (off the heat).
- Stir in the egg mixture, adding pasta water until creamy.
- Serve immediately.
