Creamy, silky and comforting — made the traditional way with eggs, cheese and pancetta.

Ingredients

  • 300g spaghetti
  • 150g pancetta or streaky bacon
  • 2 eggs + 1 egg yolk
  • 60g Parmesan or Pecorino
  • Black pepper

Method

  1. Cook spaghetti, reserving a cup of pasta water.
  2. Fry pancetta until crisp.
  3. Beat eggs with cheese and lots of black pepper.
  4. Add hot pasta to the pancetta pan (off the heat).
  5. Stir in the egg mixture, adding pasta water until creamy.
  6. Serve immediately.
