Fudgy, rich and loaded with white, milk and dark chocolate chunks — the ultimate brownie.

Ingredients

  • 200g unsalted butter
  • 200g dark chocolate (70% works best)
  • 250g caster sugar
  • 3 large eggs
  • 100g plain flour
  • 30g cocoa powder
  • 150g mixed chocolate chunks (white, milk & dark)
  • Pinch of salt

Method

1. Melt the base

  1. Heat oven to 180°C (160°C fan). Line a 20cm square tin.
  2. Melt butter and dark chocolate together in a bowl over simmering water or in short microwave bursts.
  3. Cool slightly.

2. Make the batter

  1. Whisk sugar and eggs together until pale and slightly thickened (1–2 minutes).
  2. Pour in the melted chocolate mixture and whisk until smooth.
  3. Fold in flour, cocoa and salt.
  4. Stir through chocolate chunks.

3. Bake

  1. Pour into the tin and level the top.
  2. Bake 22–28 minutes — the centre should wobble slightly.
  3. Cool completely for clean slices.
