Fudgy, rich and loaded with white, milk and dark chocolate chunks — the ultimate brownie.
Ingredients
- 200g unsalted butter
- 200g dark chocolate (70% works best)
- 250g caster sugar
- 3 large eggs
- 100g plain flour
- 30g cocoa powder
- 150g mixed chocolate chunks (white, milk & dark)
- Pinch of salt
Method
1. Melt the base
- Heat oven to 180°C (160°C fan). Line a 20cm square tin.
- Melt butter and dark chocolate together in a bowl over simmering water or in short microwave bursts.
- Cool slightly.
2. Make the batter
- Whisk sugar and eggs together until pale and slightly thickened (1–2 minutes).
- Pour in the melted chocolate mixture and whisk until smooth.
- Fold in flour, cocoa and salt.
- Stir through chocolate chunks.
3. Bake
- Pour into the tin and level the top.
- Bake 22–28 minutes — the centre should wobble slightly.
- Cool completely for clean slices.
